The African Taco Kit is a smash up of L.A. street tacos and popular black eyed pea fritters found in West Africa.  The kit uses black eyed peas to make falafel-like patties that are perfect as a meat substitute with your morning pancakes and eggs.  As appetizers on your charcuterie  board for parties, showers, tailgating snacks or on toasted brioche buns topped with sauteed mushrooms, garlic, onions and peppers.  Paired with a nice sangria or mimosa, they make a perfect brunch entree.
 
The kit contains two items: a supply of dried black eyed peas and a spice packet you'll use to season the batter.  After soaking the peas, you put them into your blender or food processor with fresh bell pepper, garlic (granulated is fine), onion and salt.  Blend well until it's like thick oatmeal.  Fry in hot oil just below medium - until the patties are browned on both sides.  (Note: The heat level is mild to some and medium to most.)  The batter you make from the peas and spices in the kit will be enough to make 30-40 appetizer sized-bites, or 16-20 larger patties.  You make it all at once, then you can portion it out and freeze the batter up to six months.  It can also be kept up to a week in the refrigerator.
