Gumbo's Daddy Recipe

I'm a simple home cook who doesn't measure everything, but here's my recipe for Gumbo's Daddy, made with love and King's Pepper.

Gumbo’s Daddy with Chicken, Shrimp and Turkey

In a 6 quart stock pot, heat ¼ cup of oil.

Season Chicken wing drumettes and flats with salt and King’s Pepper. 

 

Fry in hot oil until browned on both sides, not cooked through.  Set the chicken aside. 

 

Blend together one half red onion, one quarter red bell pepper, one 8oz can of tomato sauce, and one heaping tablespoon of tomato paste, one cup of water or stock,  one heaping tablespoon of King’s Pepper and two tablespoons of curry.  Optional: One whole habanero or Scotch bonnet pepper. 

 

Carefully pour mixture into the hot oil and stir to combine.  Bring to a simmer and cook for 10 minutes then add the chicken and a 15 oz can of collard greens plus liquid.

Add chopped turkey meat from wings and thighs (these are the parts I most frequently use).

 

After 5 minutes, add deveined jumbo shrimp cut into thirds to the simmering pot. I’ll sometimes add small briny shrimp as well.  When shrimp are done the soup is ready. 

 

Enjoy over hot rice.
